Flap Meat/ Bavette

Flap steak is a flavorful, affordable cut from the bottom sirloin, known for its long muscle fibers, making it ideal for marinating and grilling, and is often used for carne asada, fajitas, and stir-fry. Also called sirloin tip or bavette steak, it's similar to flank and skirt steak but is often more tender when cooked correctly, especially when sliced against the grain after cooking.
